This sauce matches beautifully with short and small shapes such as Penne and Orecchiette. Use as a sauce for grilled or poached fish. Spread over pizza dough and top with anchovies for Pizza Napolentana.

The Belfiore family farm, known as Masseria Mirogallo, sits on 70 acres of land in the southern Italian region of Basilicata, between Puglia and Calabria. The family specializes in cultivating heirloom vegetables, from which they handcraft exceptional pantry products. They only use vinegar and salt to preserve their bounty, and every piece of produce they put in a jar is grown on their farm
