This Fusilloni (the larger version of fusilli) pasta is made from matt, a strong and rich variety of durum wheat. When Matt pasta cooks, it releases a summery bouquet of hay, desiccated coconut and stretched curd. Its ancient taste reminds of stone cooked bread, butter and bamboo shoots.

Inspiration: 
This cut of pasta works best with both creamy and textured sauces.  We like this the most with a Sunday Meat Sauce. 

About the Producer:
