1lb ish (total) Ground Beef, Veal, Pork
1/4 cup Fresh Parsley finely chopped
2 cloves Fresh Garlic Finely chopped
1/2 cup Whole milk
1/2 cup Grated Parmesan or Percorino (Real not pre grated stuff)
1 cup Panko Breadcrumbs
1/2 cup Raisins
Extra Virgin Olive Oil for Frying.
Mix all ingredients except for meat together until incorporated. Add the ground meat and meat everything together. The consistency should be moist but not too much.
A trick it to roll a little marble sized piece and fry it to see if it needs any adjusting.
When you are happy with how it's seasoned, roll the mixture into about 1.5 - 2" diameter balls.
Here is the choose your own adventure part:
Heat oil in a frying pan and fry meatballs until you get a nice brown on all sides.
Don't overcrowd the pan.
Transfer meatballs to your favorite sauce and let simmer on low until heated through 1 - 2hrs or longer depending on how much time you have.
You can bake them at 425 for about 20min 10 on each side. Carefully flipping with a tong so they don't lose their shape. Then put in sauce until heated through.
